Support, adjustment and glazing blocks ensure that a window is not placed directly on a frame or surface, so that a space remains between the glass and the frame / surface. Through this space, the frame can ventilate and moisture can get away. If no blocks are used, the window will be in the moisture. This can cause the sealant edge of the insulating glass to come loose, causing the windows to leak. You can recognize these leaky windows by the condensation that will get between the two glass plates.
